​Russian themed evening at Carshalton’s Nightingales restaurant

Carshalton College hosted a Russian themed evening at our in house training restaurant, Nightingales, recently. The hospitality and catering students cooked a delicious five course menu for the Sutton Russian Circle.

Level 2 and Level 3 students gained experience of hosting and catering for events with students managing the restaurant and students preparing the following courses in the kitchen plus additional students are volunteering to help to gain experience.

“Last night was a wonderful experience. We have nothing but praise for you and your young team. The meal, service, setting and atmosphere were so professional. Your ears must have been burning in the kitchen with all the praise being showered on you all! Thank you very much.

Everyone was very enthusiastic and keen to return next year. Hopefully it was useful for your students to prepare Russian dishes too.

The menu included
Pre starter; Borscht, with piroshky.
Smoked salmon with blini, sour cream and caviar.
Braised beef cheek (goulash) with stuffed cabbage and steamed potatoes.
Salmon coulibiac (vegetarian) option.
Dessert was Raspberry & fresh cream Pavlova followed by Russian tea cake and coffee.

Nightingales is Carshalton College’s on-site training restaurant. Meals are prepared and served by our enthusiastic students under the supervision of experienced chefs. The restaurant offers real hands on experience and is open to the public during term time for coffee mornings, lunch, dinner, functions and business events plus our special themed evenings.

Students are on a variety of courses including Certificates, Diplomas and City and Guilds qualifications in an Introduction to Hospitality, Food and Drink Service and Professional Cookery, and cover
